Crunchy Taco Chicken Fingers & Cheesy Broccoli Sheet Pan

I've found so many great recipes over the years on the back of food packages, so I always look carefully now before I toss them in the trash. This one is another delicious example that I came across on the back of a McCormick's Taco seasoning packet. It's everything that's in it's name LOL and more!

  1. Step 1

    Preheat oven to 420°F. Cover a large sheet pan with foil and spray with nonstick spray.

    Mix seasoning packet and panko in shallow dish until well blended.

  2. Step 2

    Place broccoli in large bowl. Add 2 tablespoons of the oil; toss to coat. Sprinkle with 3 tablespoons of the panko mixture; toss until evenly coated. Place broccoli on one side of the sheet pan.

  3. Step 3

    Brush chicken with remaining 1 tablespoon oil. Coat evenly on both sides with remaining panko mixture. Discard any remaining panko mixture. Place chicken on other side of baking pan.

    Bake 12 minutes. Sprinkle cheese evenly over broccoli. Bake 3 minutes longer or until chicken is cooked through and cheese is melted.
