Crockpot Chicken and Dumplings

All the flavor of mamaw's without all the work! You're gonna wonder why you waited so long to try this recipe!

  1. Step 1
    Place chicken broth, cream of chicken soup, diced onion and celery into a greased crockpot and stir together (it will be a bit lumpy from the cream of chicken soup)
  2. Step 2

    Add the chicken and seasonings and give it a little stir.

    Cover and cook on low 4-6 hours (until chicken is cooked through)

  3. Step 3

    Remove the cooked chicken and cut it into chunks or shred it (I just shred mine in the crockpot using my meat chopping tool) and return it to the crockpot.

    Add in the frozen peas and carrots and give it a little stir.

  4. Step 4
    Separate the canned biscuits and flatten each one with the palm of your hand on a surface dusted with your flour. Season the biscuits on each side with a little salt and pepper, then cut the biscuits into strips then cut down the center. A pizza cutter works great for this.
     
    Make sure each piece is coated well with flour (this will thicken up your broth) and drop them one by one into the crockpot. Take a spoon and gently push them under the broth but don't stir them, you just want them to get moistened.
     
    Cover and cook on high for about 1 to 1 1/2 hours. Gently stir occasionally. Check a dumpling to make sure it is cooked through. If not, continue to cook until done.
     
    Serve this up piping hot and I like to sprinkle a little parsley on mine.
