Zesty Enchilada Casserole

This is a recipe from family friend, Robin Payne that I've had for years and my family LOVES this casserole. This recipe was printed in our local newspaper I don't know how many years ago and I clipped it out (I'm showing my age here) LOL I've never changed anything about this recipe except for tweaking the time or temperature when I've gotten a new stove and sometimes I use a couple fewer tortillas. Don't mess with perfection, and Robin's recipe is just that!

Instructions

  1. Step 1

    Brown ground beef, onions, and garlic draining excess grease.

  2. Step 2

    Stir in salsa, beans, salad dressing, and taco seasoning, stirring until mixed together.

  3. Step 3

    Place 3 tortillas in a 2 quart baking dish coated with non stick spray

    Layer 1/2 the meat mixture, sour cream, and cheese. Repeat layers.

    Bake covered at 350 for 20-25 minutes

    Uncover and bake for 5 additional minutes, let stand for 5-10 minutes before serving.
