Tex-Mex Chicken Casserole

I found this recipe on the back of a box of stuffing mix from Kroger a long time ago and held onto it just waiting for the chance to make it. Well, the time finally came and we all loved it! It's a comforting homestyle casserole with a crunchy Frito topping and NO taco seasoning (if you can believe that) and lots of veggies. This is just a reminder to check all your grocery boxes for recipes before you toss them; you might just find a hidden treasure.

  1. Step 1

    Preheat oven to 400 degrees and spray a 9x13 casserole dish with non stick spray

    In a large bowl combine all ingredients except 1/2 cup cheese and corn chips. Mix well and spread into casserole dish.

  2. Step 2

    Sprinkle the 1/2 cup of cheese that's left and the corn chips over the top of the mixture.

    Cover with foil and bake 20 minutes. 

    Remove foil and bake another 20 minutes or until the temp is 165 degrees and the top is browned.

    Let the casserole sit for about 10 minutes before serving then enjoy! I like this topped with some sour cream and green onions.
