Tex Mex Beef & Potato Skillet Meal
Two of my favorite things, Tex Mex and skillet meals, come together in this quick and easy delicious recipe. It's such a versatile dish to customizer to whatever you have on hand or whatever your family likes. You can eat it just like it is or use it as a filling for burritos, wraps, nacho topping, or serve it Patrick's favorite way; with a fried egg on top.

Step 1
Heat oil in a 12-inch nonstick skillet over medium heat then add ground beef. Cook and crumble beef in the hot skillet until browned.

Add garlic, taco seasoning, chili powder, cumin, smoked paprika, salt, and pepper over beef, and stir to combine. Cook 1 to 2 minutes more.

Step 3
Stir in potatoes and cook 2 to 3 minutes, then add RO*TEL tomatoes, with juice. Cook until potatoes are tender and most of the liquid is absorbed, 4 to 5 minutes more.
Top with cheese and cover to melt, garnish with green onions and serve it up!
I like mine topped with salsa and sour cream, Patrick loves his with a fried egg and hot sauce.
