Sundried Tomato & Chicken Tortellini Casserole

If I could bottle my favorite flavors it would taste exactly like this casserole! Juicy chicken flavored with sundried tomatoes and Italian seasonings, all held together with cheese filled tortellini and a creamy sauce with some baby spinach added and topped with cheese. It's quick and easy to make all in one dish and it's a new family favorite for sure.

  1. Step 1
    Preheat oven to 350 degrees. Prepare a 9 X 13 baking dish with non stick spray and set it aside. Or if you have an oven safe skillet you can prepare and bake the dish all in it like I did in the video.
     
    Boil a large pot of water and cook the tortellini according to the package instructions and drain.
  2. Step 2
    Using the reserved 2 tablespoons of tomato oil, saute the diced onion in a large skillet over medium heat about 5 minutes until they're soft. Add the garlic and saute another minute to two - be careful not to scorch the garlic. 
     
    Stir in the chopped sun-dried tomatoes, chopped cooked chicken, and baby spinach until the spinach wilts and everything is combined. 
     
    Pour in the heavy cream and chicken broth, and season with Italian seasoning, basil, and salt & pepper. Simmer for a couple of minutes.
  3. Step 3
    Toss your cooked tortellini into the skillet mixture. If you're going to bake this in a casserole dish now is the time to transfer everything into the prepared dish.
     
    Sprinkle the top with shredded mozzarella and Parmesan cheese and cover with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
     
    Let it rest for a good 5 minutes before serving.
