Stella’s Chicken Casserole

I've been making this chicken casserole for my family for as long as I can remember. This recipe was given to me by my life long friend, Kim and Stella was her momma. She was a good a woman as I've ever known and her recipe has fed many a hungry boy - Kim has three of them - and countless other families in our community. Here in the south we feed people, it's just what we do and my church has a list of ladies who cook and serve a meal for families after the funeral service of a loved one. Stella's chicken casserole is "my dish" for these times and I'm sad to say it seems I'm called to make it more often than I'd like to these days but it's truly an honor and a privilege to serve and show God's love in this small way. But friends, don't wait for "someday" to come to try this recipe, my family LOVES this casserole, the addition of the cheese makes all the difference! The flavor is rich and savory, it's easy to halve this recipe for a family of four, and it's one that is quick and easy enough to make any night of the week.

  1. Step 1

    Preheat oven to 375

  2. Step 2

    Stew chicken breasts until tender (about 1-2 hours depending on size of package. When tender, tear the chicken into shredded pieces and layer in the bottom of a 9 x 13 x 2 casserole dish (sprayed with Pam)

  3. Step 3

    Mix soups, mayo and milk together in a separate bowl. Spread this mixture over the chicken.

  4. Step 4

    Spread cheese on top of this, then finish the layers with the stuffing mix.

  5. Step 5

    Melt the butter with the chicken broth in a separate bowl in the microwave and spread over the stuffing mix.

  6. Step 6

    Cover with foil. Bake for 35-45 minutes. I uncover mine the last few minutes of baking to get it nice and browned on top.
