Southwestern Crockpot Chicken & Pasta

This dump and go crockpot dinner is cheesy, delicious, and can easily be made into a freezer meal if you want to get ahead of the game.

  1. Step 1
    Place the chicken breasts at the bottom of a crock pot and top with the beans, corn, tomatoes, onion, cream of chicken soup, milk, paprika, taco seasoning and pepper.
    Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Step 2
    Remove the chicken, shred and return it back to the crock pot. Stir in the pasta (or rice if used) and 1 cup of the cheese. Top with the remaining cheese, cover and allow the cheese to melt (3-5 minutes).

I love to serve this with a fresh salad and I always want just a couple crunchy tortilla chips to eat along side it, too. This is one of those recipes that the leftovers taste even better than the first time around! I found this recipe from Eating on a Dime and just slightly adapted it to my family's tastes.
