Southern Style Potato Salad
This one has been handed down for generations, it's got all the ingredients that southern cooks love - mayo, mustard, sweet relish, hard boiled eggs and more!

Step 1
Wash, peel (sometimes I don't peel mine) and cut potatoes into cubes of about the same size. Some people like real small cube I like mine a little chunkier. Place in a large pot and cover with 1 inch of water add plenty of salt and bring to a simmer for about 15 minutes until the potatoes are fork tender. Drain them well and let them cool a little bit. And place into a large bowl.

Into the bowl with the potatoes now add mayonnaise, mustard, vinegar, onion powder, relish, celery, onion, and the chopped eggs and mix everything together. Give it a taste and add salt and pepper and any a little paprika to taste.
Sprinkle the top with some more paprika and if you sliced one of your eggs they look pretty placed on the top, too. Cover and refrigerate at least 4 hours but I highly recommend you go ahead and treat yourself to a little bowl while it's still kinda warm. My mother in love told me she loved her potato salad warm and that was the first I ever heard of eating it warm and she was right, it's delicious!
