Slow Cooker Tamale Pie

Step 1
In a large skillet, brown ground beef until no longer pink; drain excess grease.Then stir in the cumin, salt, chili powder and pepper and place in a greased slow cooker. -
Step 2
Stir in the beans, tomatoes, corn, enchilada sauce, onions.Cover and cook on low for 6-8 hours or until heated through. -
Step 3
In a small bowl, combine muffin mix and eggs then spoon over meat mixture.Cover and cook 1 hour longer or until a toothpick inserted near the center comes out clean.Sprinkle with cheese then cover and let stand for 5 minutes before serving.
Note
Top this one with all the fixins you would use on a regular taco or enchilada - salsa, sour cream, lettuce and more onions and cheese. It's truly a one dish dinner made easy in the crockpot. I found the original recipe at Six Sisters' Stuff
