Slow Cooker Pork Loin & Veggies
If you want a crockpot meal that doesn't "look or taste like a crockpot meal" this one is for you. You're going to fall in love with this flavorful meat and potatoes all in one crockpot dinner. It's made with very simple, budget friendly ingredients that are taken to the next flavor level with some pantry staple seasonings. And we lock in the flavor and juices of the pork by giving it a quick sear before slow cooking it to tender perfection. It's quick, easy, budget friendly and sure to please!

Add cut potatoes, onion, and half of the minced garlic to a large bowl, add 3 tbsp melted butter, 1 tbsp ranch seasoning mix, and salt and pepper to taste; toss to coat the veggies then add to your crockpot.

Pat the remaining ranch seasoning (and salt & pepper to taste) onto the pork loin and sear the pork in a hot skillet to brown and create a crust on the meat, then place it in the crockpot.

Dot the remaining butter on top of the pork loin, and sprinkle the remaining garlic over the top, too.

Cook on low 6-8 hours. Cooking time depends upon your individual slow cooker. Remove the pork loin and let it rest for 5-10 minutes before slicing. Drizzle some of the melted butter from the crockpot over the meat and potatoes, and enjoy with a side salad.
