Slow Cooker Poppy Seed Chicken Casserole

This simple crockpot casserole is perfect for a busy weeknight dinner or just a slow lazy weekend when you'd rather be outside enjoying the yard instead of in the kitchen cooking. It's delicious creamy chicken topped with crackers and seasoned with butter and poppy seeds. It's a dish that will please the entire family and the cook will love the hands off cooking and easy clean up, too!

  1. In a small bowl mix together the sour cream, soup, onion and garlic powder, and poppy seeds.
  2. Place chicken in the crockpot and spread the soup mixture onto your chicken.
  3. Cook on low for 5-6 hours or high for 3-4 hours or until chicken is cooked through. Then shred the chicken.
  4. Top the shredded chicken with the cheddar cheese.
  5. Mix together crumbled crackers and melted butter then add on top of the chicken and cheese. I like to add in some additional poppy seeds and sometimes some slivered almonds, too.
  6. Replace the lid and let cook an additional 20-30 minutes to melt the cheese and warm the topping.
