Sheet Pan Chicken Fajitas

This sheet pan meal is so simple to make and a total hit with my family. And I love a quick and easy one dish family meal that cooks up perfectly in the oven in less than 20 minutes!

Instructions

  1. Step 1
    Preheat oven to 425° F and grease a large baking sheet.
     
    Cut the bell peppers, onion, and chicken into long 1/4 inch slices and place them into a large bowl. Toss them with oil and fajita seasoning mix until well combined. 
     
    Spread the chicken and veggies onto your prepared baking sheet in a single layer and bake for 15-20 minutes or until the chicken is cooked through. You can turn the broiler on for about 2 minutes allowing the veggies to brown a little if you'd like.
     
    During the last 5 minutes of cooking, wrap the tortillas in foil and place them in the oven to warm through.
     
    Squeeze the lime juice all over the hot fajita mixture, sprinkle with cilantro (if desired) and then serve in your warm tortillas with any additional toppings that you'd like.
