Rotel Cream Cheese Sausage Balls
Just when I think I've made every version there is of sausage balls, here comes another one, LOL! And this one is so delicious with it's Tex Mex twist of adding Rotel diced tomatoes and green chiles and switching up your cheese to whatever heat and flavor you desire! And with only 5 inexpensive ingredients these are the perfect quick and easy appetizer to make for any occasion and any time of the day. Plus they freeze beautifully so you can pull a few out whenever you need to and cook them up right from frozen, just add a couple minutes to your bake time.

Preheat oven to 400 degrees.Place all ingredients in a large bowl and combine well. I find if I let my sausage and cheese sit out for a little bit this is very easy to mix by hand. But you can use an electric stand mixer (I've even used my hand mixer) fitted with the dough hook attachment and mix until well combined.Scoop sausage mixture into 1-inch balls and place on a parchment paper-lined rimmed baking sheet.Bake for 18 – 20 minutes, or until brown.*If you've frozen your sausage balls uncooked - you will need to add an additional two minutes or so to the cook time.

This is one of many delicious recipes I've found at Plain Chicken and the website gives this advice about the recipe, "The sausage mixture is sticky. Resist the urge to add more biscuit mix."
