Pulled Pork BBQ Mac and Cheese
Who could resist this two-for-one Southern special; pulled pork mac and cheese! It's packed with tender, shredded smoked pork and all the right spices that make mac and cheese our favorite comfort food. A buttery panko breadcrumb topping provides a nice, decadent crunchy contrast to the creamy mac and cheese. Then instead of saucing our pork before hand we add just a drizzle of tangy, sweet BBQ sauce over top of the finished plate with some diced green onions to push us right on over the edge of indulgence!

Step 1
Preheat oven to 350 degrees and prepare a 9 x 13 casserole dish with cooking spray and set aside.
Cook pasta according to package directions and drain.
While pasta cooks, melt 6 tablespoons of the butter in a large saucepan oven over medium. Add onion and cook, stirring often, until just tender, about 5 minutes. Stir in flour and cook, stirring constantly, until onion is coated in flour, about 1 minute. Gradually whisk in milk, mustard, garlic powder, and black pepper; stirring constantly, until mixture thickens slightly, about 10 minutes.
Then remove from heat and stir in Cheddar and Colby-Jack cheeses in small amounts, until melted and smooth.

Now add cheese mixture into the drain pasta in the large pot and stir just slightly, now add the pulled pork into the pasta and cheese mixture and fold in to combine. Then place the mixture into the prepared casserole dish.

Microwave remaining 2 tablespoons butter until melted and stir in panko until combined then sprinkle evenly over pasta mixture in baking dish.
Bake uncovered for about 30 minutes, until brown and bubbly. Let stand 10 minutes, sprinkle with green onions and drizzle each plate with bbq sauce. Enjoy!

This recipe was found by no surprise on the Southern Living website. It's so delicious and feel free to use your favorite boxed or pre-made mac and cheese, you know I love a short cut. And I used one myself by buying the cooked seasoned pulled pork from Walmart.
