Pineapple Casserole
Oh gosh friends! I've seen this recipe around for years but I just never had the time to give it try. Well....I finally made the time and IT WAS WORTH IT! I admit I had my doubts just how this combination could be any good but every single person at my house loved it and it went perfect with our Easter ham. Don't overthink this one, just jump in and give it a try, you won't be sorry.

Step 1
Preheat the oven to 350 °F.
Grease a medium-size casserole dish with butter.
In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring until evenly blended. Spread crumb mixture on top of pineapple mixture. I like to toss some chopped pecans on top, too. Bake for 25 to 30 minutes, or until golden brown.
Note
I've seen Paula Deen make this a million times and I just can't believe I waited this long to try it. And I'm already thinking about how some flaked coconut might just get thrown in next time, too!
