Parmesan Garlic Chicken & Potato Skillet

If you've been here any time at all you know how I love an all in one skillet meal and this is not only one of my favorites - it's one of the very easiest and quickest, too (thanks to a little help from the air fryer).

  1. Wash (peel if desired) potatoes, and cut up into cubes, then toss with oil, salt, pepper, garlic powder, and paprika (just season to your tastes - depending on how many potatoes you are using)
  2. Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes turning them around at least a couple times while they cook.
  3. While potatoes are cooking, cook chicken in a skillet on medium high heat with a little butter and season with salt, pepper, Italian seasoning - again to your tastes.
  4. Once chicken is finished cooking add cooked potatoes to the skillet and stir in the parm garlic sauce (you might need more depending on how much potatoes and chicken you're using) Top with shredded cheese and broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts).
  5. Top with a little bit more sauce if you like and maybe some green onions. Enjoy!
