Monterey Chicken
This is my take on my very favorite dinner item to order at Chili's. At this time they no longer have it on the menu but that's ok because it was so easy to recreate at home! It looks like a lot of ingredients but it's mainly seasonings and the combination of them and the barbeque sauce really make this dish.

Step 1
Preheat the oven to 400 degrees.Heat the olive oil and butter in a large oven safe pan over medium high heat.Season the chicken on both sides with all the seasonings and cook for 4-5 minutes on each side, or until it's done and reaches 165 degrees internal temperature and remove the skillet from the heat. -
Step 2
Spread the barbecue sauce over each piece of chicken and top each piece with cheese.Place the pan in the oven for 3-5 minutes, or until cheese is melted and remove from oven.If you don't have an oven safe skillet, just transfer the chicken to a casserole dish or you can just place a lid over the skillet to melt the cheese. -
Step 3
Now garnish with the bacon, tomatoes and green onions and serve.

This dish is so flavorful and so quick and easy. When I ordered this at Chili's I always had the loaded mashed potatoes and steamed broccoli, and many times at home I serve them along side it, too. Hope you love it!
