Momma Mel’s Chili-O Chili

My momma helped me come up with this chili recipe when I first got married and she said Chili-O was the best chili seasoning out there and Granny, as we call her, is never wrong. Chili-O has a flavor profile that is very deep and hearty, but not hot and spicy. I've used McCormick when Chili-O wasn't available and it's really tasty, too. But as much as I love to try store brands, I just never have with my chili. This is another one of those recipes I've never messed with, first because I didn't trust myself in the kitchen, and then just because it's so stinking good just like it is! Hope you love it too.

  1. Step 1

    Brown ground beef and onions, drain off excess grease and return to pot.

  2. Step 2

    Add pintos, chili beans, tomato sauce, water, Rotel, and package of chili seasoning. Bring to a boil, reduce heat, cover and let it simmer at least 15 minutes but the longer the better.

Note

This is great to prep and put in the crock pot and easy to double for a larger crowd, but this amount feeds my family of four perfectly with leftovers for later. This can be customized to your liking with larger tomatoes and bigger style beans, but my family likes it just the way it is. I LOVE Chili-O but have had trouble finding it on and off the last couple years so I’ve been using McCormick some, too. The flavor or McCormick is bolder and richer than Chili-O without being spicy hot (we love flavor but not HOT) and I have to say it has grown on me, hope you love it too!
