Mini Apple Fritter Bites
These apple fritters are a small bite but they are mighty big in flavor! Loaded with small pieces of apple, applesauce, and cinnamon plus an apple sugar cinnamon glaze that just takes them to the next level. Plus these are baked in the oven so they're very easy to make and no greasy mess to clean up afterwards - which is a good thing because your family will gobble them up in no time flat and beg you to make more!

Preheat the oven to 400 degrees; spray a baking sheet with cooking spray.

In a medium bowl, whisk together the flour and cinnamon until well combined.

Add the melted butter to a large bowl, then whisk in the sugar followed by the egg. Once combined, stir in the vanilla and applesauce. Add the flour mixture and stir until well combined, then fold in the chopped apples.

Scoop 1 TBSP of batter into mounds a few inches apart on the prepared baking sheet. Bake for 10 minutes, then remove the fritters from the oven. Turn the broiler on high.

In a small bowl, whisk together all the glaze ingredients. The glaze should be thin.

Brush some of the glaze over each fritter and let it drip down the sides. Return the fritters to the oven and broil for 2-4 minutes, until the glaze starts to caramelize the tops. Rotate the baking sheet every minute to ensure even caramelization. Be sure to carefully watch the fritters so they don’t burn.

Brush the remaining glaze evenly over the broiled fritters. Let set on the baking sheet until the glaze hardens, about 15 minutes.

I came across this recipe from Reluctant Entertainer on Pinterest and it looked so good I read on to the recipe and thought that it looked pretty simple even for someone with my baking skills - which are few to none. And honey, it did not disappoint - it has become this falls most requested little treat from my family - and it WAS easy to make, too.
