Marshmallow Caramel Corn Treats
Sweet, salty, gooey, and oh so delicious! It's like a Rice Krispie treat but with popcorn!

Place popcorn in a large bowl and line a large rimmed baking sheet with foil and spray with non-stick cooking spray.In a large saucepan over medium heat, melt the butter. Add brown sugar and corn syrup and cook and stir for 2-3 minutes, until well blended.Reduce heat to medium low and add the marshmallows. Cook and stir until marshmallows are completely melted. Remove from heat and stir in vanilla.Pour mixture over popcorn and stir to coat. Spread popcorn onto prepared baking sheet to cool completely.

When I saw this recipe from Let's Dish I knew I had to try it and it was certainly not what I expected but I have to say it was a pleasant surprise. I thought it would be kinda like caramel corn, with individual popcorn pieces. But it turned out more like Rice Krispie treats, so I just cut them into bit pieces and that's how we ate them, oh and I did add just a little sprinkle of cinnamon to mine.
