Lois Kaye’s Sweet Potato Casserole
This is my family's very most favorite version of sweet potato casserole, Patrick (and myself, too) love the brown sugar pecan topping! And it's a good old church cookbook recipe from my precious friend Lois Kaye Russell. I love her and her husband Charles dearly and I have so many fond memories of Lois Kaye teaching my Sunday School class. She and Charles have two sons (and grandkids now, too) but when she taught me in church our class was all girls and she would host sleepovers for us at her house. We always had such a great time, I remember all of us taking a walk to a creek near her house one time and she showed us where she found a lot of the driftwood she collected. Another time we got the bright idea that we would roll their yard with toilet paper, I think we asked first - not sure - but we all agreed we would clean it up, too LOL Charles and Lois Kaye always gave us their time, patience, and many prayers over the years and I'm eternally grateful. And I love that we all still attend church together and have experienced so much of our lives together, that's a blessing not many people ever receive.
