Loaded Jiffy Cornbread Casserole
This recipe is what happens when our favorite southern comfort food, Jiffy Cornbread Casserole, gets loaded with bold flavor! It’s got everything we love in one hearty dish: cheesy goodness, smoky bacon, sweet corn, a pop of green onions, a hint of spice from green chilies, and the tang of sour cream, all tucked into a golden-brown sweet Jiffy cornbread base. It’s the kind of dish that turns heads at potlucks and becomes a fast family favorite on weeknights. Whether you’re serving it for a holiday dinner, alongside BBQ ribs, roast chicken, or enjoying it as a standalone dish, it’s guaranteed to bring smiles!

Preheat the oven to 375 degrees and prepare a 9 x 9 baking dish with some non stick spray or butter.

In a large mixing bowl stir together the cornbread mix, sour cream, cream-style corn, green chilies, half of the cheese, bacon, green onions, eggs, and melted butter. Season the mixture with salt and pepper to your liking.

Pour the cornbread mixture into the prepared baking dish and smooth it out with a spatula. Sprinkle the remaining shredded cheddar cheese evenly over the top.

Bake for 25–30 minutes, mine usually takes more like 40-35 minutes, or until the casserole is set in the center and the top is golden brown. Check it like you would a cake, it's done when a toothpick inserted into the center comes out clean or with just a few crumbs.

Let the casserole cool for a few minutes before serving, this helps it set and makes serving easier if you're the type that likes nice clean slices - I tend to enjoy scooping mine out with a big spoon LOL

If you've watched me on YouTube very long you know I have a love of recipes using Jiffy Mixes, especially the cornbread casserole. I don't know why I never thought about loading it up before but you could certainly turn this into a main dish by adding a pound of cooked sausage, some shredded cooked chicken, ham or leftover BBQ. You can also prep this dish the day before, cover and refrigerate, then pull it out about half hour before you're ready to bake it, add the rest of the cheese and go from there.
