Lemon Ice Box Cake
(We know it as Maddie's Favorite Lemon Dessert)
It's no secret that my youngest has a real sweet tooth, she especially loves lemon and chocolate desserts. She has always loved my Chocolate Éclair Cake and when I stumbled across this similar recipe for a lemon version, I just had a feeling she would love it too. So just like that, I've now added another "must make" recipe to our Easter menu. But that's ok, this one is no trouble at all to make, and the light lemon flavor is just perfect for Spring.

Step 1
Mix milk and pudding together then fold in Cool Whip

Step 2
Grease pan with spray or oil, line with graham crackers

Pour half pudding mixture over crackers and spread evenly

Lay down another layer of graham crackers

Step 5
Pour remaining pudding mixture over grahams and spread evenly and top with graham crackers
Icing

Step 1
Mix melted butter, 2 tbsp milk, 2 tbsp lemon juice and 1 cup powdered sugar

Step 2
Add one more cup of powdered sugar

Step 3
Pour over top and spread evenly

Freeze 4 hours, then transfer to fridge
