Lasagna Soup

This rich and hearty lasagna soup is a cold weather favorite!

  1. Step 1
    In a large soup pot or Dutch oven, cook and crumble the ground beef over medium-high heat and drain excess grease. Add the onions and the garlic to cook along with the meat.
     
    Then add the beef broth, diced tomatoes, crushed tomatoes, tomato paste, and Italian seasoning. Stir and increase heat to high. When soup begins to simmer, reduce to medium-high once again and begin adding the pasta by breaking the noodles into smaller pieces. Stir and simmer until noodles are soft, 8-10 minutes. Taste the broth and adjust spices as needed.
  2. Step 2
    Remove the soup from the heat when the noodles are tender, but still chewy.
     
    While the pasta is cooking, stir together the ricotta, Mozzarella, and Parmesan cheeses in a small bowl.
    Scoop the soup into bowls and top with a generous scoop of the cheese mixture. We love to serve this with a crusty loaf of Italian bread - Enjoy!

Note

I've made this soup a number of different ways and I believe this is now my favorite version. Sometimes I will add about 1/2 cup of heavy cream into the soup if I have it on hand, too.
