Hoe Cakes aka Fried Cornbread
As a kid my momma made fried cornbread for us all the time and we always thought it was just the best treat ever, completely unaware that this was probably one of the things she made when money was tight. It's made with simple, inexpensive ingredients most home cooks always have on hand and it's so quick and easy to whip up. It's a delicious bread to eat with pinto beans and greens and then the leftovers can be dessert or breakfast served with a little butter and sorghum or syrup. Honey, this is good old Appalachian county cooking at it's finest!

Mix all the ingredients up except for your frying oil, of course. The batter will be kinda like the consistency of pancake batter.
Heat the frying oil up in a skillet on medium heat. Spoon about 2 tablespoons full into the hot skillet - the batter will spread out some, brown them up on each side. They also cook up kinda like pancakes, when you see the little bubbles appear on the one side you know it's time to flip them. Drain them on a paper towel and serve em hot! If you don't want to cook the entire batch of batter it will keep for a couple days in the refrigerator.
