Healthy & Flavorful Balsamic Chicken
This is a handwritten recipe that I've kept tucked in my favorite cookbook for years. It's one of the first dishes I want to make when spring pops it's head up but it's great anytime. I always make a little more chicken than we will eat at dinner so I can use it on salads later in the week, too. I have no idea where I found this recipe but's it one that has stood the test of time.

Step 1
Prepare chicken by butterflying each large breast and score the top with a knife being careful not to cut all the way through the chicken breast.

Make a marinade by mixing the olive oil, balsamic vinegar, brown sugar, Italian seasoning, salt and pepper. Let the chicken sit covered in this marinade for at least 30 minutes.

Chunk up the red onion and toss it and the tomatoes into a 9x13 casserole dish.
Drizzle with a little olive oil and sprinkle with a little salt, stir to coat. Then nestle the marinated chicken breasts in the dish with the veggies, pour the leftover marinade over the veggies.
Bake at 430 degrees for about 25 minutes (make sure the chicken has reached an internal temp of 165 degrees)
When it's cooked through, it you like you can top it with some mozzarella cheese and pop it under the broiler to brown up a bit. But I really just love this dish like it is - simple, flavorful, healthy, and delicious!
