Fried Tater Cakes
I've been eating tater cakes my entire life and I've always considered them a southern Appalachian delicacy; little did I know that my momma was just using up leftover mashed potatoes LOL! Over the years I've used this basic recipe (which is PERFECTION just as it is) and added in all kinds of different ingredients that I found hanging out in my fridge like, whole kernel corn, black beans, bacon, green onions, shredded chicken, and more! It's the perfect budget friendly way to dress up any meal and use up lots of leftovers in the process! Let me know what you think and what you add when you make yours!

This is one of those recipes that's hard to put measurements and instructions on paper for - you just have to feel it, LOL. Basically you mix together the potatoes (I like to use leftover or instant ones, they're nice and stiff), the egg to help bind it all together, a little onion, shredded cheese, salt, pepper, and garlic powder to taste. You can throw in some hot sauce if you want and I've added a lot of different leftovers - see the description of this recipe above for some ideas. Add in some flour, the mixture needs to hold together and be pretty firm. Slide a spoonful at a time into a frying pan of hot oil and fry them 3-4 minutes per side, drain on a paper towel and enjoy this good ole county favorite!
