Easy Cheesy Chicken Salad Melts

I don't usually eat chicken salad hot but this cheesy chicken salad is perfect served warm and open faced on fresh sour dough bread. And the flavor of the cilantro in this one makes it completely different than any I've ever made and I love it!

  1. Step 1
    Drain canned chicken well and add to a large mixing bowl, then break it up lightly with a fork.
     
    Stir in 3/4 cup mayo or to taste along with salt, pepper, paprika, and garlic powder to taste.
     
    Add diced tomatoes, chopped cilantro and shredded cheddar cheese and gently stir to combine. You can add hot sauce if you like.

I found this recipe on Natasha's Kitchen and thought it sounded delicious, I have tweaked the flavors just a bit to suit my family's tastes and it's something they love for me to make as an appetizer for game night or as a quick, light dinner.
