Easy Baked Apples with Crumble Topping
After our trip to Ellijay GA, the apple capital of Georgia, this fall I couldn't wait to bake some of them up with all the warm spices of fall. Plus these are topped with a delicious brown sugar and oatmeal crumble topping, and they're so easy to make!

Step 1
Preheat the oven to 375 degrees. Butter or spray a baking dish large enough to fit 6 apple halves with non-stick cooking spray.
Cut each apple in half from stem to end and use a spoon to scoop out the core, seeds, and stem. Then place the apple halves in the baking dish with the flesh facing up.
Sprinkle the apples with 1 tablespoon of brown sugar and 1/4 teaspoon of cinnamon.

Melt the butter in a saucepan over medium heat. Remove the pan from the heat, then stir the flour, oats, brown sugar, remaining 1/4 teaspoon of cinnamon, and salt into the melted butter.
Divide the topping between the apples, lightly pressing it down onto the apples.
Cover with aluminum foil and bake for 25 minutes. Uncover the apples, then bake for another 20 to 30 minutes until the apples are soft and the topping has browned.
Serve with a scoop of ice cream, a drizzle of caramel sauce, or leave them plain and enjoy!

I made just a few tweaks to this recipe that I found on Inspired Taste to create it using ingredients that I had on hand and it was so delicious! Patrick especially loved these and is already asking when I am planning on baking him apples again, LOL!
