Crunch Wrap Casserole

We love making copycat versions of the Taco Bell Crunch Wrap at home the only draw back is the cook has to fry them all up individually making it a hard meal for the family to sit down and enjoy together. Well here's the solution we've all been waiting for - The Crunch Wrap Casserole! It's everything we love about the crunch wrap made in one big family style casserole. It's really fun and easy to put together, too!

  1. Step 1

    Preheat the oven to 375 degrees F

    Heat a large skillet over medium-high heat. Add ground beef and begin cooking, crumbling as it cooks.  Add onion and cook, stirring often, until meat is browned and onion has softened, about 5 minutes. Season with taco seasoning and stir to coat the meat mixture. Pour in water and cook for 2 minutes, stirring constantly and scraping up any browned bits from the bottom.  Remove from heat and set aside.

  2. Step 2

    Brush melted butter lightly to coat a 9x13 baking dish.  Arrange 5 tortillas along the edges and bottom of the pan, allowing any excess to hang over the sides and overlapping to completely cover the bottom and sides of the pan.  Spread shredded cheese over the tortillas. Top evenly with tomatoes, then spread sour cream over top of the tomatoes. You can spoon sour cream into a plastic bag and and squeeze over the tomatoes. 

    Next, place the tostada shells over the sour cream overlapping and breaking them if needed to make them fit. Spread nacho cheese sauce over tostadas. Now, pour cooked beef mixture over cheese sauce and spread into an even layer. 

    Place remaining tortilla on the center of the beef mixture.  Wrap the over-hanging tortillas around over the top tortilla and brush casserole with the remaining butter and press down any loose ends. (Watch the video for visual instructions of this step if you need more clarification)

  3. Step 3

    Bake in the preheated oven until golden brown and lightly toasted, about 30 minutes. Then let stand for 5 minutes and then carefully invert casserole onto a serving board or cutting board. Using a large serrated knife, cut the casserole into desired servings. Top with shredded lettuce, more sour cream or guacamole (see the video for my new favorite little sour cream, guacamole concoction), and hot or taco sauce if desired.
