Crockpot Tuscan Chicken

Baked Tuscan chicken is one of my families VERY favorite dinner recipes and the crockpot is one on my VERY favorite ways to make an easy dinner. This recipe brings together both of those favorites in one delicious and easy way!

Instructions

  1. Step 1
    Season both sides of the  chicken breasts with Italian seasoning, onion powder, and salt and pepper. 
    Spray the inside of the crockpot with nonstick cooking spray and lay the seasoned chicken in the bottom of the crockpot.
  2. Step 2
    In a mixing bowl, whisk together the minced garlic, chopped sundried tomatoes, chicken broth, heavy cream, 1/2 cup parmesan and mozzarella cheeses, cream cheese, Italian seasoning, chili powder, and onion powder.
    Pour and spread the sauce over the chicken in the crock pot.
    Cook on high for 3 hours, or low for 5 hours.
  3. Step 3
    About 30 minutes before serving, add the chopped spinach to the crockpot and top it off with the remaining shredded parmesan and mozzarella cheeses. Replace the lid and allow the spinach to wilt. Serve over cooked pasta or mashed potatoes, and enjoy!

Note

I took inspiration from The Recipe Critic and made some additions and modifications to her recipe make this more like the baked version of Tuscan Chicken that my family loves so much. And I have to say, this one tastes really close to the original and all the ease of hands off cooking for those busy evenings!
