Crockpot Mexican Chicken Soup

Perfect for cozy nights and comfort food at its best! Tender chicken, a medley of beans, corn, cream of chicken soup, chicken broth, Velveeta cheese, and a spicy twist from taco seasoning, this soup is a flavor fiesta in every spoonful.

  1. Add first 8 ingredients to a crockpot and stir well to combine.
  2. Add chicken breasts, cover and cook on low 6-8 hours or high 4-6 hours.
  3. When chicken is fully cooked, remove and shred then return shredded chicken to the crockpot.
  4. Stir in the cubed Velveeta, cover and cook on low for 30 minutes.
  5. Stir again and serve topped with your favorite Tex Mex toppings!
