Crockpot Mexican Chicken Soup

Add first 8 ingredients to a crockpot and stir well to combine.

Add chicken breasts, cover and cook on low 6-8 hours or high 4-6 hours.

When chicken is fully cooked, remove and shred then return shredded chicken to the crockpot.

Stir in the cubed Velveeta, cover and cook on low for 30 minutes.
