Crockpot Loaded Potato Soup
This 5 ingredient dump and go crockpot soup is perfect to warm you up on a cold crisp day.

Spray the insert of your crockpot lightly with non stick spray. Combine all the ingredients except for the cream cheese and optional toppings.
Mix well and cook on low 6-8 hours or high 2-4 hours.
Add the block of softened cream cheese to the soup for the last 30 minutes of cooking. Then stir until the cream cheese is incorporated into the soup.
Serve with toppings of your choice and we love to bake a pan of cornbread to crumble into ours. Enjoy!
Note
I don't add any additional salt because the soup and broth have a good bit of sodium and you can always use the low sodium versions of each of them. Sometimes I will add in a couple tablespoons of ranch seasoning to change up the flavor profile just a bit, too.
