In a large skillet, brown the ground beef until it is fully cooked. Drain off excess fat and add to the crock pot. Then add the onion, green pepper, garlic, black pepper, Rotel tomatoes, Velveeta, and cheddar cheese. Mix until well combined.Cover and cook on low or for 2 hours.Cook pasta to al dente per directions on the package. Drain and set aside.Add milk and pasta to the crockpot, then mix until fully coated, and enjoy!

This is another winner I found from Slow Cooker Meals - my family has loved every single recipe I've tried from this website! As usual I tweaked this one just a little bit, substituting ingredients that I had on hand and that my family prefers. I also think that the addition of some frozen veggies would be good in this dish but Patrick says, "No way!" LOL
