Crockpot Baked Cheesy Chicken Tacos

I love a good taco and these are delicious and perfect for a busy night's dinner. The chicken is seasoned and cooked low and slow in the crockpot to give it a ton of flavor. Then in this version we're going to finish them off in the oven covered with more cheese inside a crunchy taco shell!

  1. Step 1

    Add the chicken into a greased 4 quart crockpot and sprinkle with taco seasoning. Cover with Rotel and the extra green chilies if desired.

    Cover and cook on low 3-4 hours or until chicken reaches an internal temperature of 165 degrees.

    Shred chicken and stir in the queso cheese, cover and let the chicken sit for about 10 minutes.

  2. Step 2

    Add taco shells to a casserole dish standing them up beside one another and fill them with the chicken mixture. Cover with shredded Mexican style cheese and bake at 325 degrees for about 10 minutes, until the cheese is melted.

    Top with all the fixings your heart desires and enjoy!
