Crispy Tuna Patties
Tuna patties are a tasty and economical meal that's pretty healthy, too. You can have them put together and on the table in about 15-20 minutes! And of course you can substitute salmon in this recipe if you like!

Add the tuna to a large bowl and stir in the onions, parsley and other seasonings. Crack the egg to the side and mix it with the mayo and lemon juice. Combine this all together, and add in the bread crumbs and use your hands to combine and mix evenly.

Divide the mixture into 4 equal portions and shape into patties.
Heat oil and butter over medium heat. Gently lay the tuna patties in the pan, and cook until browned, about 3-4 minutes on each side.
Note
These tuna patties are best served warm and you can turn up the heat by adding some hot sauce to the mixture before you cook them if you're into that. I love them with greens, or spinach I've wilted in a skillet with garlic and sundried tomatoes. But they're also good on a bun with all the fixins, if you can't tell I just really LOVE tuna patties! I've made them for years but when I saw this recipe at unsophisticook using panko bread crumbs, I knew I had to give this recipe a try!
