Crispy Chicken Bean & Rice Burritos

I'm a huge fan of Tex Mex so I'm always ready for a burrito. But what makes this one even better is that this basic recipe is really just a starting point of inspiration for you to customize with whatever your tastebuds are craving. And if you've been around here long, you know I'm using lots of little bits of leftovers and pantry items to take the flavor up a notch with my version. Hope you enjoy these!

  1. Step 1

    Prepare the refried beans by heating them in a sauce pan and stir in sour cream, cheese, and seasonings to bump up the flavor. This will serve as part of the filling of the burritos but you'll probably have a little left over to eat on the side or use to make a little taco salad.

    Heat the bag of 90 second rice in the microwave according to the package directions and set aside.

  2. Step 2

    In a skillet on med high heat saute peppers and onions in oil until they're softened, lower the heat to medium and add the garlic and saute additional one minute. Add the chicken to the skillet and season with the cumin, chili powder and smoked paprika and saute until the entire mixture comes to temperature.

  3. Step 3

    In another skillet heat 1 tablespoon of oil, build your burritos on the tortillas by layering: beans, rice, chicken mixture, and cheese. Fold in the side and roll them up and pan fry in the oil on each side until they are browned and crispy.
