Crispy Baked Tortellini Bites
This is a brand new recipe to me and I'm so glad I finally got around to it, it's delicious! And this recipe goes a long way - I'm just sharing half of the original recipe I found online - so if you need to feed a crowd this one fits the bill.

Step 1
Preheat oven to 375 degrees. Line two baking sheets with parchment paper.
Make a little dredging line up with three shallow bowls.
Bowl #1: Add flour
Bowl #2: Add eggs and milk. Whisk to combine.
Bowl #3: Panko bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper. Mix well.

It’s best to work in small batches. Place the tortellini in the bowl of flour. Thickly coat each piece. Move the pieces to the egg/milk mixture. Coat all sides evening, taking care that no white spots of flour are visible. Transfer the wet pieces to the bowl of bread crumbs. Generously coat each piece. Place the breaded tortellini on a baking tray, leaving plenty of space between pieces. When baking, this will allow the pieces to crisp up on all sides.

Bake for 14-15 minutes, or until the tortellini bites are beautifully crispy and golden.
Drizzle melted butter over the top. Sprinkle with Parmesan cheese, more Italian seasoning, and if you want a kick - some red pepper flakes.
Serve with a bowl of marinara sauce for dipping

I had been drooling over this recipe that I found at Confetti and Bliss for so long and it was everything I knew it would be. I did just a little bit of modifying for my tastes and the amount I needed to make.
