Creamy Slow Cooker Italian Chicken Noodle Soup

This Slow Cooker Creamy Italian Chicken Noodle Soup is hearty, healthy, and flavorful. It's packed with tender chicken, garlic, roasted red peppers, a touch of cream, parmesan, and more. Perfect for a cool fall or winter evening!

  1. Step 1
    Add chicken broth, chicken breast, roasted red peppers, garlic, dried parsley, Italian seasoning, salt, and pepper to a slow cooker. Cook on high for 3 hours or low for 6 hours until chicken is cooked through. Shred the cooked chicken and return to the crockpot. 
  2. Step 2
    Whisk together the cream or milk and corn starch and add it to the slow cooker with the pasta and spinach. 
    Turn to high and cook for 15-20 minutes until pasta is al dente or cooked to desired tenderness (this can take up to 30 minutes). Turn off, stir in cheese and serve immediately.

 I found the original recipe for this soup from The Recipe Rebel and I have only slightly tweaked it using ingredients that I had on hand. I loved the added flavor from the roasted red peppers in this soup and I can't wait to use them in other dishes, too.
