Chocolate Eclair Cake
If you love a chocolate eclair you are going to love this quick and easy chocolate eclair cake. But don't let the name fool you; there is NO BAKING involved. This is a delicious dessert made with a light and creamy vanilla pudding, powdered sugar, and whipped topping filling layered between graham crackers and topped with a convenient can of chocolate frosting. My family thinks this must be on every holiday table!

Lightly grease a 9 x 13 cake pan with oil.
Mix pudding, powdered sugar, and milk together on low speed or with a whisk then fold in thawed Cool Whip.

Put whole graham crackers in cake pan, lining pan until the bottom is covered. Then pour in half of the pudding mix on top of the graham crackers. Place another layer of graham crackers on top of the pudding mix, pour the remaining half of pudding mix over these graham crackers. Finally place one more layer of graham crackers over the pudding mix.

Remove foil top from frosting and microwave in 30 seconds intervals stirring each time, until frosting is pourable but not too thin - and pour it over top of the top graham cracker layer and smooth out over the top.
Cover and refrigerate at least 4 hours; it's best to make this the night before you plan on serving it.
