Chocolate Dipped Peanut Butter Ritz Crackers

This is an old classic Christmas favorite, it's simple, delicious, and only takes 3 ingredients.

  1. Step 1

    Line baking sheet with wax paper and build you peanut butter and Ritz cracker sandwiches making a total of 24 sandwich crackers, laying them on the wax paper. I like to go pretty heavy with the peanut butter, about a tablespoon between two Ritz

  2. Step 2

    Melt the chocolate almond bark, along with the Crisco, in the microwave according to the package instructions. Usually it's for one minute then stir and continue in 15-30 second increments, stirring in between, until it's smooth and melted.

  3. Step 3

     Working with one sandwich cracker at a time, place it into the melted chocolate and turn it over using two forks, making sure it's completely coated. Lift the cracker out with one fork while gently shaking the excess chocolate off, also drag the bottom of the fork along the rim of the tray, then place the cracker back on the wax paper. I find using a toothpick in between the teeth of the fork helps slide the cracker right off. 

    If you want to decorate these, now is the time to load them down with sprinkles or sea salt before the chocolate sets up.

    When you have the entire tray finished, set them in the fridge for about 10 minutes to completely set. Store these in an airtight container and they stay fresh for about 2 weeks. I have found that this is a treat that freezes pretty well, too. Just be sure to divide each layer with wax paper.
