Chocolate Cherry Brownies

I'm not a great scratch baker - but with these semi-homemade chocolate cherry brownies no one will ever suspect it! They're rich, gooey, and decadent thanks to the addition of some chocolate chips, coffee, and cherries added right into a boxed mix. I have no shame in my game and you won't either after you take one bite of these delicious brownies!

  1. Preheat oven to 350 degrees, line an 8 x 8 baking dish with parchment paper and spray the paper with non-stick spray, set aside.
  2. In a large mixing bowl, add the brownie mix, 1/2 cup chocolate chips and 1/2 cup quartered cherries. Mix to coat the chocolate chips and cherries with the brownie mix.
  3. Add the oil, eggs, coffee, and vanilla and mix all ingredients together.
  4. Spread the mixture into the prepared baking dish.
  5. Bake in the preheated oven for 35-45 minutes (time will depend on the mix you are using and if you have an 8 x 8 or a 9 x 9 inch pan and how hot your oven cooks, too) when it's cooked perfectly a toothpick comes out clean when inserted in the middle.
  6. Place the extra cherries and chocolate chips on top of the brownies while still slightly warm, pushing them gently into the top of the brownies.
  7. Use the paper to removed the brownies from the pan to a cutting board and let them cool completely before serving.

I came across this recipe from This Is Not Diet Food (appropriately named) and the first thing that caught my eye was how pretty these brownies were, the second thing that caught my eye was that they start with a boxed mix - that's right up my alley!
