Chicken Taco Casserole

The whole family will love this Tex Mex chicken taco casserole that is full of healthy proteins and easy low fat swaps! It's full of flavor and tastes so great no one will ever know it's good for them!

  1. Step 1
    Preheat oven to 375 degrees and grease a 9×13 baking dish.
     
    In a skillet, heat olive oil over medium high heat.
    Add garlic for 1 minute, then add onion and bell peppers. Cook for about 5 minutes or until soft. Then add the black beans and taco seasoning and combine and let warm through then remove from heat.
  2. Step 2
    Lay 2 tortillas on the bottom of the greased baking dish. Then spread half of the bean mixture, chicken, enchilada sauce, and cheese over top.
     
    Start another layer of tortillas and repeat the layering, finishing with a layer of shredded cheese.
     
    Cover with foil and bake for 15 minutes, then remove the foil and bake for another 5 minutes or until the cheese is nice and golden.
    Let cool and top with chopped green onion. I also like to add a little sour cream and chopped tomatoes to the top of mine.
