Chicken Cakes with Remoulade
All I can say is that this recipe BLEW OUR SOCKS OFF! It was so flavorful and the remoulade just took it all the way over the top. This was one of those meals that we talked about for days, lol. It tastes and looks like something you would be served at a nice restaurant and believe it or not - it's made with canned chicken! You HAVE TO TRY this one for yourself!

Step 1
Heat 2 tablespoons of oil in a large skillet over medium high heat. Add the diced peppers and green onions to the pan, season with salt and pepper to taste and saute over medium-high heat until beginning to brown. Add the minced garlic cooking for one minute then remove from the heat and allow to cool slightly.

To a medium bowl add chicken, lemon juice, Dijon, mayonnaise, garlic, Italian seasoning, parsley, creole/old bay seasoning and 1 cup of panko breadcrumbs. Then mix in the sauteed vegetables making sure chicken is thoroughly blended with the other ingredients. Taste and adjust the seasonings, if needed. Add beaten egg, mix well.

Pour the remaining panko breadcrumbs onto a plate. Divide the chicken into eight rounded scoops about 4 ounces each. Coat with bread crumbs using additional crumbs as needed. Flatten to your desired thickness gently turning to coat the chicken cake on all sides.Place in a single layer on a sheet pan or platter and chill for 30 minutes.

When ready to cook remove from the refrigerator and fry in a tablespoon of oil in a large skillet over medium-high heat for 3-4 minutes on each side depending on the thickness. Fry in batches adding more oil, as needed. Serve hot with the remoulade sauce.

For the remoulade sauce, place all of the ingredients into a bowl and mix until smooth. Chill until serving.
