Chicken and Squash Casserole

This comforting chicken casserole is the perfect way to use up all those summer squash, it's creamy and delicious, and the stuffing adds so much flavor and texture to this dish. I love this version of the squash casserole best of all because the addition of the chicken makes it a complete meal and with this recipe you don't even have to sauté your veggies before baking. The squash cooks perfectly without getting watery. And it's just as delicious made with zucchini or a mix of both these veggies!

  1. Step 1

    Preheat oven to 350 degrees.

    In a very large bowl, combine the stuffing mix and melted butter and pull aside ½ cup of the mixture for topping.

    To the remaining stuffing add squash, cooked chicken, Mozzarella cheese, cream of chicken soup, onion, sour cream, and seasonings and mix well.

    Spread the mixture into a greased 9 x 13 casserole dish.

    Sprinkle reserved stuffing mix on top and bake uncovered for 40-50 minutes or until cooked through and the top is golden brown.

    Let the dish rest for about 10 minutes and I love to serve it topped with fresh diced green onions (although in the video I forgot to grab the ones I chopped out of the fridge until after we'd already eaten)

This recipe was adapted from a zucchini dish I found at Six Sisters Stuff and I changed it up just a bit and added some seasonings to get the flavors my family really loves. They have lots of great recipes on their site, be sure to check them out.
