Cheesy Beef Enchilada Tortellini Skillet

This recipe checks so many boxes for me, one skillet meal, Tex-Mex flavors, tortellini, and less than 30 minutes start to finish! And if you have an oven safe skillet, use it - you can finish this off under the broiler. But if you don't have one, no worries, just pop a lid on at the end to melt the cheese.

  1. Step 1

    Start cooking the tortellini as directed on package.

    Meanwhile cook the ground beef, onion, and garlic in a large oven safe skillet (if available) before draining any excess grease.

  2. Step 2

    Mix in the seasoning followed by the water, enchilada sauce, the tortellini, beans and corn into the beef and bring to a simmer for about 5 minutes. 

  3. Step 3

    Top with the cheese, place under the broiler (or just pop a lid on your skillet if it isn't oven safe) until the cheese has melted, about 2-3 minutes, before topping with sour cream, green onions and enjoying!
