Cattle Drive Casserole

This Tex-Mex inspired casserole starts with ground beef, onions and garlic with tomatoes all layered on a bed of Red Lobster Cheddar Bay biscuit mix with all kinds of cheese and sour cream layered in between. Need I say more - you have to make this casserole for your family soon, it's a real crowd pleaser.

  1. Step 1
    Preheat the oven to 350 F. Cook and crumble ground beef and onions over medium-high heat, add garlic and sauté 1-2 minutes, then and add taco seasoning, Rotel, and green chilies (I only use half of the 4oz can). Let simmer 3-5 minutes. 
  2. Step 2
    In a bowl, combine the sour cream, mayonnaise and 1/4 cups of each of the cheeses. Mix to combine and set aside.
  3. Step 3
    In another bowl, combine the Red Lobster Cheddar Bay biscuit mix, water, 1/2 cup cheddar cheese, and seasoning packet. Stir until a soft dough forms. Spread into a greased 9-by-13-inch casserole dish.
  4. Step 4
    Top the biscuit mix with the beef mixture, then spread the sour cream mixture over the beef and tomatoes mixture, and finish by sprinkling the remaining cheeses on top.
     
    Bake 30 minutes, until bubbly and browned on top.

I've seen variations of this recipe all over social media and usually that's a good sign to try it out. I combined bits and pieces of a few of them to customize this recipe for my family.
