Cast Iron Skillet Mac & Cheese
This is a recipe from Heather at The Kneady Homesteader on YouTube and my family thanks her every time I make this, LOL. It's the best homemade mac and cheese I've ever made and she said she sometimes tosses in some chicken and broccoli to make this a one dish meal for her kids.

Preheat oven to 400 degrees.
Cook pasta to al dente and reserve about a cup of pasta water in case you need to thin out your cheese sauce.
Meanwhile, in an oven safe skillet melt butter over med high heat then add flour and mix together to make a roux and cook until the raw flour smell is gone (just takes about 2-3 minutes)
Add in milk and stir together until it begins to simmer and thicken.
Next stir in cheese and seasonings until the mixture is smooth and reduce heat.
Now stir the drained pasta into the cheese sauce and mix well.
Place the entire skillet in the oven for 30-40 minutes and enjoy!
