Caramel Apple Eclair Cake

This decadent, no bake dessert is made with graham crackers, spiced apple pie filling, pudding, and whipped topping. It's easy to put together and is best made ahead which makes it perfect for the holiday season. It is very sweet so just a little piece will do ya, again making it a dish that's great to take to a big potluck.

  1. Place the apple pie filling into a bowl, then use a knife, scissors, or like me - my mix and chop - to cut the pieces of apple into smaller chunks. Next, add the pumpkin pie spice to the apple pie filling and set aside.
  2. In a separate bowl whisk together the vanilla pudding, milk, and powdered sugar. Then fold in the thawed whipped topping and vanilla extract.
  3. Lightly grease a 9×13 pan, place one layer of cinnamon graham crackers on the bottom. Spread half of the apple pie filling over the graham crackers. After that, spread half of the vanilla pudding mixture over the apple pie filling.
  4. Then repeat a layer of graham crackers, then apple pie filling, another layer of vanilla pudding, and top with a layer of graham crackers.
  5. Lastly, heat the hot caramel topping up in the microwave so you can carefully pour it over the top and smooth it out.
  6. Place the cake into the fridge to chill for at least 4-6 hours, overnight is best. When you are ready to serve, slice and enjoy!

This is a recipe Granny was telling me about, she saw it on Moss Family Kitchen but somehow I had missed it. When we went to find the recipe we couldn't find the video where Falon shared it. So I found one online at Butter With A Side of Bread and tweaked it just a little bit. This was really delicious, the entire family and extended family all enjoyed it!
